Who knew in a matter of two weeks I would get two requests for a coconut cake! This cake here was for a friend of mine who I've known since middle school. We were in Orchestra together back in the day, I played 2nd violin and she played cello. It was so nice to hear from her and I was thrilled that she asked me to make her husband's birthday cake. The birthday boy asked for a simple coconut cake. The cake was well received by everyone who tasted it and those who did not even like coconut went back for seconds!!
